Here is a serious wine from the Jura. The fruit is taken from three grand terroirs Les Corvées, Les Saules and Côte de Feule. Patrice has produced a structured wine here with 8 months élevage in futs and half muids of which 50% are new. Low yields are a trait of Patrice’s viticulture and this wine is harvested at 30hl/ha of 85% Trousseau and 15% Ploussard with only 1000 bottles made. Indigenous yeast fermentation, no sulphites or filtration and bottled with a protective CO2 spritz that freshens the wine on entry.
